88 Days since I ended my 365 project, 88 days that have been some of the dullest days my eyes have ever seen. It was like the light in the sky changed, it was dull, colorless and lackluster. I could no longer take it, so I am back. I missed my camera so and I missed the way I saw the world around me.

So why start back up today, October 1st? It is the beginning of a new fiscal year and that seemed like a good starting point to me, why not? It was just quirky enough to fit my personality.

So once again, thank you for checking in with me and enjoy the view.


in a pickle

I have been cooking lately, trying recipes that I had no time for. One I actually documented because they were so good. Bread and Butter Pickles, I got inspired after having them a few times at Healdsburg Bar and Grill. Here is the recipe I found. I also made a batch of Peaches and Cream muffins, which with all the butter and sour cream reminded me more of a biscuit. Which is a good thing, but not the same as a muffin. I will place that recipe below the pickle one.

Bread-and-Butter Pickles

This recipe yields lots of cucumber pickles to keep on hand for picnics or snacks. Try them on sandwiches or burgers, as a complement to field peas, or as a snack with whole-grain mustard, cheddar cheese, and crackers. Thin-skinned pickling cucumbers are essential.

5 1/2 cups thinly sliced pickling cucumbers (about 1 1/2 pounds)
1 1/2 tablespoons kosher salt
1 cup thinly sliced onion
1 cup sugar
1 cup white vinegar
1/2 cup cider vinegar
1/4 cup packed brown sugar
1 1/2 teaspoons mustard seeds
1/2 teaspoon celery seeds
1/8 teaspoon turmeric

1. Combine cucumbers and salt in a large bowl; cover and chill 1 1/2 hours. Drain; rinse cucumbers under cold water. Drain; return cucumbers to bowl. Add onion to bowl.

2. Combine sugar and remaining ingredients in a medium saucepan; bring to a simmer over medium heat, stirring until sugar dissolves. Pour hot vinegar mixture over cucumber mixture; let stand at room temperature 1 hour. Cover and refrigerate 24 hours. Store in an airtight container in refrigerator up to 2 weeks.

Yield: 16 servings (serving size: about 1/4 cup drained pickles)

Peaches-and-Cream Muffins
The Deen Bros. Y’All Come Eat Cookbook, Copyright 2008

Nonstick cooking spray
2 cups self-rising flour
1 cup (2 sticks) unsalted butter, melted I used salted
1 cup sour cream I used lite sour cream
¼ cup sugar
1 teaspoon vanilla
1 (15-ounce) can sliced peaches, drained and chopped into ¼-inch pieces

1. Preheat oven to 350 degrees F. Coat the cups of a 12-cup muffin tin with cooking spray; set aside.
2. In a large bowl, whisk together the flour, butter, sour cream, sugar and vanilla. Gently fold in the peaches.
3. Divide the batter evenly among the prepared muffin cups. Bake for 30 to 35 minutes or until golden and toothpick inserted in the center of a muffin comes out clean. Let muffins cool in pans for 10 minutes. Serve immediately or transfer to a wire rack to cool completely

Take a look at yourself in the mirror, who do you see looking back?

Is it the person you want to be? Or is there someone else you were meant to be, the person you should have been but fell short of.

Is someone telling you that you can't or you won't?..... Because you can.

Believe that love is out there; believe that dreams come true everyday, because they do.

Sometimes happiness doesn't come from money or fame or power. Sometimes happiness comes from good friends and family, and from the quiet nobility of leading a good life.

Believe that dreams come true everyday, because they do.

So take a look in that mirror and remind yourself to be happy, because you deserve to be….Believe that. And believe that dreams come true everyday....because they do.

This post completes my year long journey to take at least one photo a day for an entire year. I started with a sunrise on 07.04.08 and one year later I ended with a poetic nod to my humble start with a sunset on 07.04.09. Both taken only about 2 miles from each other, one year and a few hours apart. Time really does fly!!!!

More than 650 posted photos, more than 16,000 edited or unedited photos in on my computer. 55 posts on blogspot, millions of words of encouragement, endless support from my son, husband, parents, siblings, beloved family and wonderful friends.

In November of last year I posted this quote with some of my photos and it really sums up the way I feel about my efforts, “There is nothing brilliant or outstanding in my record, except perhaps this one thing. I do the things I believe ought to be done. And when I make up my mind to do a thing, I act.”- - Theodore Roosevelt

Many people ask if I am going to continue, yes, but not on a daily basis, but I am going to continue to share some beautiful views and some lovely words, as well as some other things that are dear to me or catch my eye. So Stay Tuned!

Wow, do I love that statement, because as I approach the end of my goal of "one photo a day for a year", I feel like I am looking at the same things, but this reminded me I may be looking at the same things, but I am seeing them differently. It made me feel so inspired.

Because I am nearing the end of this goal, will I end it? Most days I will say it will change slightly and that is all I will say. You have to stay tuned to find out. And I have about 20 days to figure it out.......... enjoy the view.
